My Sunday started off a little bit like this…

You have got to love Sunday mornings for lazy and long breakfasts like this.  That almond croissant was delicious!

I also got in an early morning strength workout in at the gym to start my day.  There was literally no-one there at one point so it felt like my own private gym…can’t be bad!

This week my workouts have been so much fun:

Monday: 40 minutes walking to and from my car, 20 minutes of HIITs on the cross trainer and treadmill, lower and upper body workout, abs, 10 minutes HIITS on the bike.

Tuesday: 40 minutes walking to and from my car

Wednesday: 40 minutes walking to and from my car

Thursday: 40 minutes walking to and from my car, 20 minutes of HIITs on the cross trainer and treadmill, upper body workout, abs, 10 minutes HIITS on the bike.

Friday: 40 minutes walking to and from my car

Saturday: 1 hour spinning class

Sunday: 5 minute warm up on the bike all over strength routine.I’m still making the most of those walks to and from my car during the working week.  Getting to the gym can be hard wen you commute but I did manage to get in 2 evening workouts after work this week.  Working out early in the morning is more my thing, but I have to say I quite enjoyed those evening workouts and I certainly slept well afterwards.

Coyo has been a staple in my diet this week. I just love the creamy rich texture and it tastes incredible.  I’ve even hunted down a fantastic health shop close to me that sells it so I don’t have to wait for trips to Wholefoods to get my hands on it. =)

There has been plenty of bowls of chopped fruit topped with Coyo going on.  This one contained a chopped banana, chopped peaches, Coyo, shelled hemp seeds and raw raisins.

For the first time in ages I had some cereal this week…

These were spelt flakes by Sharpham Park with a chopped apple and almond butter.  I’d forgotten how much I loved cereal ad this really hit the spot!

Green smoothies are never too far from my lips.  They make perfect portable breakfasts to drink in the car on the way to work.  This one was pretty tasty and contained spinach, a banana, half an avocado, almond milk and water.

This has got to be one of my highlights of my weeks, my super cute stackable lunch box…sad but true!  I just love it and have been using all week. The food inside the lunchbox was really good too. The salad was made using curly lettuce, cherry tomatoes, brown rice and peppered smoked mackerel.  On top I had some chopped kiwis, mini strawberries and blueberries…heaven!

My slow cooker has been working it’s magic again and I made a lovely chilli using veal mince and red kidney beans.  I topped it with grated cheese and had lots of steamed broccoli on the side for a fab mid-week meal.

You cannot beat runny egg yolks! I had this on Thursday night and the asparagus spears were great for dipping into the yolks.  The baked sweet potato was delicious topped with some Clover Seedburst.

We managed to fit in a movie in the middle of the week and I got my raw chocolate fix from my stash that I picked up from Wholefoods the other week. I ate the entire bar because it was so good!

What is your favourite Sunday breakfast?  I would have to say pancakes but I also loved that almond croissant with the fruit platter for something a bit different.
