Happy Sunday everyone! It’s been such a beautiful weekend weather wise here in the UK. The countryside has looked a picture postcard kind of stunning.
Please let it be spring!
This week I have been in a bit of a pancake groove for breakfasts again- there’s no complaints from me about this one I assure you! 😉 Rather than some of the pancakes that I have been eating over the past couple of weeks I decided to revisit an old favourite…socca pancakes!
I decided to experiment with them a little bit and added 1 whole egg to 1/3 cup of water and 1/2 cup of chickpea flour. You end up with quite a thick batter which then puffs up into the fluffiest socca pancakes in the frying pan. To make them vegan you could try using a flax egg, but I’m sure how this works as I haven’t tried it.
So far I’ve just made one big pancake with the batter with plenty of toppings. I’ve had them topped with drippy peanut butter, chopped apples, cinnamon and organic honey:
It’s also fantastic topped with roasted kabocha squash, Greek yoghurt and organic honey:
Amazing, I could easily eat these all day!
This week I scored some kabocha squash in Waitrose and made the most of their availability by buying 3 of them. I’ve been eating them pretty much non-stop all week, even snacking on it standing by the fridge.
This salad was great with the roasted kabocha, red peppers, mixed leaves and a wonderful soy, honey and almond dressing, yum!
I used the same dressing on these roasted sprouts, leeks and cauliflower with hard boiled eggs. For a quick and easy dinner this tasted pretty good!
Salads have been a bit of an obsession this week (no changes there!) for lunches. They are just so quick and simple to throw together and usually anything goes and it still tastes amazing. This tuna, tomato, mixed leaves and Sabra hummus salad was pretty epic.
Of course the week wouldn’t be complete without green smoothies. This one was really simple: spinach, banana, frozen mixed berries, chocolate protein powder and almond milk. I took this to work with me in my new beaker as a breakfast on the run.
Desserts have been the usual frozen fruit scenario, but the other night I fancied something a little bit different and decided to make a chia seed pudding. It contained chia seeds, almond milk, raw cacao powder and chopped dates for natural sweetness. I had this with some defrosted blueberries and it worked a treat.
I’m really enjoying my food at the moment…life is good!

I love socca, I haven’t made one in a while but I usually stuff with hummus and loads of salad! Jealous of your kabocha haul, I need to get another one soon! I love chia pudding, probably one of my favourite foods at the minute, I’m loving smoothies, high raw cereal bowls and salads right now!
I’m so addicted to kabocha at the moment, but they are so hard to get hold of! Sounds like you are really enjoying your food!
I did try socca, but I never had much success and to me it tasted very savoury and a bit weird?

Hasn’t the weather been lovely…so refreshing!! I have actually had some ‘get up ad go’ this weekend!! Although it has been a little colder up north today. What protein powder do you use? I bought a sample of a USN chocolate flavoured protein the other day but it tastes foul!!!! wondered if you have any suggestions?? 🙂 x
The weather has been wonderful. I use a lot of different protein powders, mainly Good Hemp, Vega Shake, Spirutein. I really want to try Sun Warrior too.
The chia pudding looks good, I have still yet to try chia seeds. What proportions do you use when making chia puddings?
I’ve never tried socca either, in fact I’d never heard of it before until I came across your blog!
I tend to just free pour with my chia puddings I’m afraid. I will have to measure out the ingredients sometime as now I’m quite curious.
I love socca’s and tend to eat them with savoury fillings such as tuna or goats cheese which is really good : )
