Now what do you do with the most ugliest vegetable known to man, the celeriac? Sorry to be mean to the that knobby and rough skinned vegetable, but let’s be honest it’s not the most attractive vegetable out there.
Last week I received some celeriac in my organic veg box and had a bit of a dilemma of what to do with them. In the past I’ve usually just used them as part of a root vegetable mash, but I thought that they deserved some love and to be made into something special, a super creamy and delicious soup.
Ingredients (makes 4 medium servings)
1 onion chopped
1 medium sized celeriac diced
1 apple chopped
1/2 tsp of cumin
1 tsp of all purpose seasoning
1 tsp of dried mixed herbs
1 litre of stock
1 cup of almond milk
Fry the onion in a pan until softened and then add the celeriac and apple and cook for a further 2 minutes. Pour in the stock, almond milk and spices add allow the soup to simmer for 20 minutes until the celeriac has softened.
Pour the mixture into a blend or use a hand blender to blitz up the soup until smooth. Return to the pan to warm through for a further 5 minutes.
This soup is so rich and creamy and tastes lovely with the apple. I topped mine with olive oil, natural yogurt and nuts, so good!

I’ve seen a few funky looking carrots in my time too! This soup looks yummy! I love celeriac soup, it’s quite creamy so I will definitely be trying your version with apple!
The apple cuts through the creaminess a little and add a different taste to the celeriac. I hope you like it!

My least favourite was celery, until I discovered you can put peanut butter on it and now it’s one of my favourites 🙂

I think I have only ever had it on a pizza! Least favourite vegetable is probably cauliflower unless it’s cauliflower cheese. Cheese sauce makes everything better! 😉
I love cauliflower at the moment. I don’t think there is any vegetable that I don’t like, except maybe celery unless it’s in soups or stews.
I went through a huge celeriac kick a few months ago, but the past few times I really didn’t enjoy it, not sure if I’ve just had too much, or that they aren’t the best this time of year. I usually just make chips with them, maybe I should try a soup!
They work really well in a soup. I’m going to have to try them as chips sometime though.
My mom likes to roast it with other root vegetables – it’s tasty!

Celeriac and apple sounds like a fantastic combination. I’ve never cooked with it on my own, but my mom often uses it in soup and roasts it as well. As for least favorite veggie, eggplant and zucchini definitely win that one… Ick.
