It’s been quite eventful this week in my house with lots to celebrate. On Monday Alfie found out that he has been accepted for surgical post after he finishes his medical training and as you all know I passed my PhD viva on Wednesday, so it has been quite the week. Thank you all for your wonderful messages of congratulations. They all mean so much, I still cannot believe it!

We have a lovely meal planned for next week to celebrate.  I’m really looking forward to it already.

This week I have been loving my workouts. I had to take a couple of days off in addition to my rest days for revision. I’m so glad that I did as I felt so drained after all of that reading. In the gym I have mainly been doing strength training and yoga at home to stretch out my muscles. I will share my full routine next week now that everything has settled down.

Last night I decided to use up some the figs that I had bought on my shopping trip.  I had them topped with peanut butter, organic honey and lots of dark chocolate.  This was so needed after a such a stressful week, yum!

This Thai red curry with soba noodles, veggies and salmon was insanely good.  It had been so long since I’s had a Thai curry and this coconut and spiced goodness really hit the spot!

I did a big grocery shop on Friday and stocked up on my frozen cherries this week, love them! I had some with almonds, Greek yoghurt and organic honey, yum!

This week I’ve been on a smoothie kick again, not like I need much of an excuse.

This chocolate and peppermint protein smoothie tasted like an indulgent breakfast treat as it tastes so good!

I had this green smoothie on the way to work yesterday.  It included spinach, avocado, a banana, double fudge crunch protein powder and almond milk.  So creamy and delicious!

Before my viva I stopped to get some petrol from the Marks and Spencer’s garage and treated myself to lunch. I had the nutty whole grain salad and bought an extra salad bowl as part of the 2 for £4 deal to make it more satisfying.

Leftover chick pea and spinach curry with steamed cauliflower and red peppers.  Sometimes it’s all about the leftovers, they just taste so much better than when the dish was originally made.

Endive salad with organic French Brie and organic tomatoes and Sabra hummus.  I’ve come to the conclusion that I have a love/hate relationship with endives.  The leaves can be far too bitter sometimes and almost cringe worthy.  All of the toppings on this salad made it taste pretty good though.

Last night I had my first try of mutton stew with roasted squash, sprouts and leeks.  I was quite surprised as the meat was just lovely. With the venison steak last weekend it’s been fun trying different meats recently.

Another frozen cherry moment this time with natural yoghurt, fresh figs, organic honey and mixed nuts.

Overall it has been a pretty spectacular week on all accounts.  I cannot wait to go out for our celebratory meal.  A few years ago I would have gone out on a made rave and got steaming drunk to celebrate.  But, now I’m such a light weight I don’t think I could keep up with my former self.
