Hey hey lovelies! I hope you are enjoying your weekends.
Today marks the end of a very long tunnel for me as since Boxing Day I have been working constantly without a day off, that’s 11 days straight! I feel and look completely run down and my house looks like a complete mess, but right now I couldn’t care less. I’m quite happy cozied up on my sofa with a hot water bottle, duvet, tea and a good movie.
Like most of you out there I have been on a major healthy eating curve since the start of the New Year. I’m not being at all restrictive and simply cutting back on things like refined sugar and keeping an even balance between protein, carbs and lots of veggies.
As well as packing in the green and berry smoothies this week I’ve also been feasting on lots of other lovely and equally healthy food.
1. Plain oats made with water and unsweetened almond milk with a chopped pear and maple syrup
2. Stir fried green beans, tomatoes, peppers and baked spiced baby potatoes with goat’s cheese and chutney.
3. Lots of water and peppermint tea to make sure I’m getting more than my 2 litres a day, got to stay hydrated!
4. An abundance of Pink Lady apples, addicted!
1. Black bean and corn soup…so satisfying!
2. Raw carrots with plain hummus for afternoon snackage.
3. Raw almonds
4 .Chopped persimmons
5. Stir fried broccoli, green beans and sweet potatoes with some smoked mackerel.
Of course I am all about balance even when keeping on the straight and narrow and thought that a little weekend treat wouldn’t go a miss.
Having Costa on your doorstep at work can be a danger zone to spend all of your money at the best of times, but I have been so good and really needed this soya gingerbread babychino at blueberry muffin. It was like a reward to myself for completing my 11 days straight.
Well, I’m off to relax and watch my movie. I have quite a wordy and personal post coming up for you tomorrow, hope you don’t mind!

I’ve been getting through loads of Pink Lady apples lately too, so good! 11 days in a row at work sounds exhausting, you definitely deserved the Costa treat. x

You have also encouraged me to try a persimmon which I have never had before, I have seen them in the supermarket but me being the creature of habit that I am always ends up with the same old fruit in my basket!
This weekend I have been experimenting with my new sewing machine that I was given for Christmas- it will take a little getting used to before I feel confident with using it. I also went to a new fitness class this morning with my mother which was surprisingly fun, mostly because it was outside- despite the miserable weather it was much nicer to be out in the fresh air rather than in a hot sweaty gym. We have made it a New Years resolution to go together every week on Sunday mornings now so no rain on Sundays from now on please!

I feel your pain – I’ve been working since last Saturday and won’t have a day off until this Saturday! Day 15 of 19.. almost there! Your goats cheese salad sounds delicious, love the chutney addition and will have to give it a go. Hope you enjoy your well deserved rest!

I give myself a weekly treat; every Friday after work me and my fiancee meet up for a cappuccino and a muffin and chill out in a coffee shop for a bit. it’s a nice way to wind down without feeling too guilty.
Same here with Pink lady apples; we get them brought into work and I can’t help tucking into a bunch of them 🙂

Ouch that’s a tough schedule! Bet you are glad for a day off! I came back to Dublin this weekend, so we’ve been unpacking + taking the decorations down and then I worked yesterday. Me + Nick are both ill though so we are moping around the house today! Your idea of relaxing sounds lovely, and I am totally addicted to pink lady apples too 🙂
