Where did this weekend go? – It has just flown by!!!

It has been another working weekend for me…sob! As a result I have been super busy and haven’t had much time for anything else.  It’s pretty much involved commuting, eating, working and falling asleep on the sofa.

And what about all of the flooding in the UK!  There is a road near a river that has broken its banks in my village that is flooded. Plus some of the country lanes are like driving down a river.  Thankfully we live on a hill and haven’t been affected.  I hope everyone is staying safe out there.

Pretty much having no time this week has meant that I have had to have quick and fast meals, but of course they have all still been healthy and nutritious with a few treats thrown in.

     

Before heading to work yesterday I had time to cook breakfast.  I scrambled two duck eggs and had these with a chopped pear and apple, dusted with lots of cinnamon.  Eggs and cinnamon sounds like a strange combination, but I’m telling you cinnamon goes with everything, EVERYTHING!

Again my love of seasonal eats was proven with lunch.  I had made a batch of Swede, Squash and Red Onion Soup.

This was the first time that I have blended swede in a soup.  Oh, it tasted so good that this recipe is definitely worth blogging about.

Obviously, it wasn’t long before I let a persimmon pass my lips-these never get old!

For dinner last night I went for the lazy option with some leftover bean casserole that Alfie had cooked earlier in the week with some steamed greens. After a long and busy day leftovers are always my saving grace.

This was followed by some super delicious Lindt dark chocolate with coconut!

  I certainly had the cravings for a pumpkin pie smoothie which I based on the recipe for my Pumpkin Pie Sundae.

It was incredible.

For my mid-morning snack I munched on an oldie but a goodie- raw carrots and peanut butter!

Today for lunch I took a salad to work.  It included romaine leaves, tomatoes, celery, cucumber, beets and goat’s cheese…yum!

For dinner tonight I am thinking grilled apple and pork sausages with steamed greens, roasted squash and a red onion gravy.  I cannot wait for dinner already!

I find that my staple lunches for work are soup and salad these days.  What are your your favourite things to take to work for lunch?
