Hello everyone!  I hope this week has been treating you well and that my lovely American readers had a lovely Thanks Giving. 

Last night I was at the Honorable Society of Lincolns Inn to see my brother-in-law be called to the bar.  We can now call him a barrister.  This year has been truly immense for me and my family. 

This time last year I was in America and got to celebrate Thanks Giving for the first time ever.  Yesterday it really made me realise that my family have  so much to be thankful for.  So many achievements have been made and we are all truly blessed to have one another. I have such amazing family and friends and I will always be thankful for that.

I love this time of year for food.  This week I have really been enjoying some seasonal eats.

The other day I picked up some duck eggs.  We have had these before and couldn’t wait to make a meal with them.

Inspired by a dish by Shannon I had 2 fried duck eggs served with brown rice and my Sweet and Salty Sprouts which I also added some broccoli too, so tasty!  The runny yolk was so creamy and was fab mixed in with the brown rice.

My salads have been embracing seasonal produce as well.  This one included romaine leaves, tomatoes, celery, cucumber, a chopped apple, dried figs and a balsamic dressing.

My persimmon addiction has been in full swing this week. I enjoyed one with some goat’s yoghurt with honey and a banana, amazing!

The yoghurt has been great as afternoon snacks at work.  I had some with a home made trail mix and it was delicious!

I’ve been having lots of creamy oats for warm breakfasts this week.  This bowl of loveliness of Vanilla Chai and Pumpkin Oats really hit the spot!  I will be blogging the recipe for this soon.

Of course there is never a smoothie too far away.

This super creamy and simple smoothie was wonderful.  It was made from a huge scoop of chocolate and PB swirl protein powder, a banana and almond milk.

I really wish that Thanks Giving was a big holiday over here.  To take the time to think about what you are thankful for is such a wonder thing to do.
