Hello loves! I hope you have had a great week.  I really have some of the most amazing readers.  I cannot thank you enough for you wonderful comments on my WIAW post.  They were all so encouraging and I am in a far more optimistic mood now and very excited about future possibilities.

It’s the weekend again which means that I have one more week left to my big day!  I’m so excited as is the whole family.  I think we pretty have everything ready now, I just have to finish some of the wedding breakfast stationary.  It’s so weird to think that next weekend I will be a married woman; it hasn’t quite sunk in yet.

This week I have been enjoying some pretty delicious eats, especially lots of oily fish.

 

Last night we had some lovely baked salmon fillets with some stir fried vegetables which included edamame beans, greens and asparagus in my current favourite honey and sesame sauce.

 

This was followed by a slice of Alfie’s birthday cake.  He turned the 3-0 last Saturday so we decided to finish if the remainder of the cake.  He had a blast celebrating.  Whilst I was relaxing in a spa on my hen do Alfie was also on his stag do.  His stags kept everything hush-hush and took him to the Royal Ascot where they had him dressed as a jockey whilst they were in there finery.  They then went on a night out in London.  My hen sounds so peaceful in comparison, but I guess it was a double celebration! =)

 Today I stunk out the office at work with some delicious but smelly mackerel.

 

I had it with a side salad of red little gem leaves, sweet peppers, celery, tomatoes and I later added some sweet chilli hummus.

 

This week I had a really amazing pear, carob and vanilla green smoothie.  The colour of this looks vile and really doesn’t do it any justice.  It contained spring greens, a pear, carob, vanilla extract, chia seeds, unsweetened almond milk and water, yum!

This morning I treated myself to a huge bowl of porridge oats.  It was so cold so this really was perfect.

I added pitted dates, almond milk and vanilla extract to the oats.  The almond milk made the oats very creamy and the dates went all sticky like a sticky toffee pudding.  I couldn’t resist the temptation of the peanut butter jar either!

Another breakfast that I really loved this week was the curried scrambled eggs that I made using the free range organic eggs from the farm just down the road.  Other additions included cumin, curry powder and red kidney beans and topped with Greek yoghurt.  This was protein packed and super filling.

 

My favourite snack this week has to be one of the 9bars that I picked up to treat myself. I had forgotten how good these babies are!

I’ve got a lovely weekend planned.  Tomorrow I’ve got a bit of a lazy morning planned which involves pancakes and me and Alfie have a pre-wedding photo shoot with our photographers and having a quick run through of some photo ideas.
