A high protein savoury waffle recipe made with quark that is naturally low in fat, courgettes and flavoured with mild curry spices. Since these can be made in advance, they make a great weekday breakfast option, easy weekend brunch idea or a leisurely lunch at work – just take them from the freezer when required!
We’re mad about waffles here, and normally there isn’t a weekend that goes by when they don’t make an appearance. Normally it’s a toss-up between classic waffles or Belgian waffles loaded up with lots of berries and maple syrup. However, wanting to change things up a bit I decided to venture down the savoury waffle route.

- 300 g /2 cups spelt flour
- 100 g /1/2 cup Graham's The Family Dairy Quark
- 3 eggs
- 1 courgette grated zucchini
- 400 ml /2 cups almond milk
- 1/2 tsp baking powder
- 1 tsp garam masala
- 1/2 tsp turmeric powder
- 2 tbsp finely chopped coriander
-
Set up your waffle maker as per the manufacturer's instructions (I used the Classic Waffle setting).
-
Stir all the dry ingredients together in a bowl and then beat in the quark, almond milk, eggs and grated courgette.
-
When ready, pour the batter into the the waffle maker and cook.
-
Serve with your favourite toppings and enjoy!
Obviously, being the weekend I didn’t fancy venturing to the shops to get ingredients for breakfast, mainly because I was still in my pyjamas (not a good look!), so I had a rummage in my fridge and cupboards to see what I could use to make a delicious savoury waffle recipe. Thankfully, I had some Graham’s The Family Dairy Quark in my fridge, which has a gorgeous creamy texture and is a great ingredient to add to lots of different meals.
Quark is a soft cheese with a tangy flavour so it works well in sweet and savoury dishes. Being naturally low in fat and high in protein, it’s ideal to use if you’re looking to cut back on the saturated fat and calories as part of a healthy and balanced lifestyle. I used the quark to replace the butter that is traditionally used in waffle recipes, resulting in a light and fluffy texture. Graham’s also produce a vanilla flavoured quark that would be lovely to use in sweet baked goods.
At the moment, I’m just throwing courgettes into everything – did you see my Morello Cherry, Lime and Courgette Cake? They have a really neutral flavour and add a lovely moistness that makes these waffles light and fluffy. Of course, another bonus is that by adding extra vegetables into your meals you’re also boosting their value and contributing to your 5-a-day quota too.
HAVE YOU COOKED WITH QUARK BEFORE? WHAT’S YOUR FAVOURITE SAVOURY GO-TO BREAKFAST?

I love waffles but I’ve never had a savoury one before, this sounds great!
I usually make sweet ones, but have been converted to savoury ones with this recipe. 🙂
I adore courgettes – we eat so many of them! My veg guy has been getting some cracking ones recently.
Oooh, this would be a great way to use them up.
This is such a great use of quark, and not something that I have seen before. I will be giving it a try at the weekend 🙂
Thanks! It would work exactly the same
way as the Greek yoghurt. Makes them
lovely and fluffy.
Yum yum, I’m a big savoury waffle fan. I’m not too familiar with quark, but I love cottage cheese, which is really low in fat and high in protein too. Must try quark for a change!
It tastes very similar to cottage cheese, just without the lumps.
I’m a huge fan of sweet waffles. I never thought of making a savoury version.
Me neither…until now!
Oh!! These looks fantastic. I love waffles as do the kids! I’ll have to try these, I actually have a courgette left over, perhaps I’ll use it up in some waffles. Great idea. Thank you for sharing.
Thank you! It’s a great way to get kids to eat their veggies.
I love waffles but usually have sweet waffles, I have never thought of savoury waffles before, am going to have to give these a try x
Me too, but this recipe has converted me.
Ahh I sold my waffle maker when I moved. I only used it once! But I’m sure these would be great as pancakes too. They look great!
Yes! Pancakes would defintiely work with this!
These look lovely! Are they green inside? I think my daughter would love them 🙂
Thank you! They have green flecks from the courgette, kid love that!
These waffles sound and look delicious, we’re big waffle and courgette fan so I know my family would love these! Quark is such a fabulous ingredient:-)
This is a great one for you to try then and a lovely way to eat more veggies. 🙂
I like the idea of savoury waffles. Tried a few but I still haven’t found one that I’m fully happy with. This sounds delicious with the garam masala and turmeric 🙂
Thanks Nadia, it’s a bit different but really works.
I never thought about making waffles this way! So clever x
Thank you, it’s a nice twist I think.
What an interesting recipe, it’s something I would never have thought to combine but sounds great.
It is very different, but I just love those curry spices.
Oh this looks so much more healthier than my usual brunches – thanks for sharing! Perfectly times as I’m trying to shed a few lbs x
My pleasure, the quark helps bring down the calories quite a bit.
I absolutely love waffles and to have a savoury version too?
These would be so good as an afternoon snack with ginger beer
Definitely like the idea of serving them with ginger beer.
I think I’d like to try this out. I’m really curious to see if I’d like that quark!
You can’t actually taste the quark. It just makes them nice a fluffy and replaces the butter.
Hands up I do love waffles! I definitely need to try this for myself I think 🙂 x
Thanks! I love them too! 🙂
I never cooked with quark before. Many moons ago a bought a tub but never used it…. great recipe inspiration. R
They look incredible. I’d love to make them to see if I can replace my unhealthy waffles with a good variety!
Ha! They are certainly little bit healthier.
The waffles looks delicious. I am going to try this recipe.
Thank you!
I’m going to be completely honest and say I’m not entirely sure about these because I have a sweet tooth and love my pastries for breakfast. I’m sure these would do me a lot more good though!
Ha! I have a sweet tooth too, which is why I fancied making a savoury option and it works really well.
ooo i really do like the sound of this. i don’t have a waffle pan but i may try this as a pancake instead
I’ve never tried savoury waffles but these sound delicious!! Thank you x
Oh I bet the Quark was such a welcome coolness besides the heat of the Curried Waffle – Ingenious recipe Jenna!
Thank you Helen, it complemented the curry flavours very well.
This is a nice twist in the waffles. I normally just have sweet ones so this one is a must try. 🙂
I am seriously intrigued by these, I always, without fail, usually opt for sweet waffles x
omg i love you for posting this. have been thinking about making waffles but don’t really like the sweet ones and like you – obsessed with courgette ha! going to try this next week *bookmarked*
I love waffles but never had any like these before!
Loving the sound of this recipe. I think it is time to dig out my waffle maker from the bottom of the cupboard!
As a 100% chocolate syrup waffle fan I must say this recipe is quite mouthwatering! You can also include them in this high protein diet I happened to come across recently!
I’ve never heard of quark before, but it sounds delish. Love the sound of the courgette waffles too, but I’d probably forgo the curry spices, personally – I’m not much of a curry fan! x
I love waffles as it reminds me of holidays! Your waffles looks super delicious and I feel so hungry just looking at them!
