This time last week we were on the Welsh coast in Pembrokeshire on a family mini-break to celebrate my brother-in-law’s 30th birthday. With the exception of a university trip where we stayed in a manor house all weekend, this was my first real trip to Wales where I got to see its beauty and get out to explore. I made the most of having access to the beach and went for a couple of runs, which is something that I could definitely get used to. There were 15 of us in total, so the house that we stayed in was completely manic, but we all had an amazing time!

The first day was a complete wash-out, however, the following 2 days were just beautiful and we had a lovely time on the beach. The kids had fun building their sand castles and I sat and watched whilst eating this EPIC salted caramel ice cream cone, too good!
I did eat a hell of a lot in Wales, so to balance things out when we got home I reacquainted myself with my Nutribullet and made this strawberry & avocado chocolate protein green smoothie for my post-run breakfast one morning, yum!
Eggs have been a winner for me this week. I’ve loved adding a splash of full-fat milk to them to make them go all light and fluffy. With half an avocado on the side, this made an awesome nutrient packed breakfast full of lots of healthy fats.
We always have a huge pile of sweet potatoes in the house because my little man loves them. We’re a bit sweet potato mad and I’ve got in on the action to make speedy weekday lunches like this baked sweet potato topped with hummus and feta with salad.

Talking of speedy meals, I made this quick tuna pasta dinner on Friday night and used courgetti instead of pasta. I added avocado, tuna, sweet corn and grated cheese for what turned out to be a delicious and healthy dinner. Considering that I made this on a whim, it turned out really well and is something that I will be making again for sure.
I was in peanut butter heaven with this cupcake that I picked up from a bakery in Wales, look at all of that peanut butter frosting!
On the warmer evenings when I’ve fancied something for dessert, I’ve turned to the freezer and dug my spoon into this gorgeous dairy-free organic chocolate ice cream by Booja-Booja. This tastes so decadent when in fact it only has 4 ingredients and is actually pretty healthy.
British strawberries are in season now and for me they’re the best, so juicy and sweet! I had some with full-fat Greek yoghurt and lots of peanut butter for breakfast yesterday. We’re going strawberry picking next week at one of the local farms and I’m really looking forward to creating some strawberry based recipes to share on the blog.
It really has been a fantastic week, it was sad to leave Wales, but I know that we will return again soon. One of my favourite things about the UK is its stunning coastlines that really aren’t given enough credit. Oh, and the countryside and strawberries aren’t half bad either! 🙂

I agree the coastlines in the UK are lovely- Dorset is my favourite place to visit with a nice coastline I think.
I’ve never even been to Dorset, or though we have friends moving there soon so it may be the perfect excuse to visit.
Those photos are astounding!!! I can’t help but admire all those healthy meals that you have pictured. I’m still attempting to get back on track. Do you have a recipe for that courgetti pasta meal?

We visited Wales last weekend too and had a fabulous time, but we are regular visitors. I agree the coastline is second to none.

Ahh Wales, I do love it there! South Wales for Cardiff is great but North Wales for the scenery is just beautiful. Though the Brecon Beacons are gorgeous too…

Oh I LOVE Wales. I always say my blood is English(/Scottish) but my heart is kind of Welsh – cheesy but true. I went to secondary school in Monmouth, South Wales for 7 years so part of me definitely grew up there. Definitely one of my favourite places.
Hmm best of British… I shall always remember driving up the coast near Durham with my friend and stopping for fish and chips which we ate in the car, looking out to sea with the rain pouring down around us. I’d say that was pretty British, and so much fun.
What a perfectly British scene that you described there. You can’t beat a portion of fish and chips when you are by the sea, rain or shine. 🙂

It was like heaven Claire! It was about a 3 hours drive for us, so not so close, but I would love to go back again soon.
