Last Sunday we had a lovely family day and went for a walk on the Inspector Morse Trail in Oxfordshire.  The TV series was filmed in various locations across the city, a few of the pubs are just a short drive from our house and the weather was gorgeous, so we decided to make the most of it.

We walked through a massive meadow full of buttercups with random cows roaming freely before stopping at one of the famous pubs by the river called The Trout.

Given the stunning weather and the beautiful location everyone seemed to have the same idea and we had to wait nearly an hour for our table, but it was worth it just for the view. I had my first Pimm’s of the season whilst we waited.

Since it was Sunday, I had to have a roast dinner.  I went for the lamb roast that came with all the trimmings, including a massive Yorkshire pudding that I couldn’t finish.  Alfie had a 3-roast dinner that included chicken, lamb and pork and all the trimmings too.

Even though I couldn’t finish my roast dinner, there is always time for dessert right?  This salted caramel chocolate pot had my name all over it and was probably the best thing on their dessert menu.  It really needed the crΓ¨me fraiche on top as it was really rich, but so good!

My epic Sunday roast was followed by this equally delicious green smoothie that I made the following morning.  I whizzed up some watermelon, strawberries, spinach, avocado, cashew nuts and unsweetened almond milk to make this super thick and creamy smoothie for breakfast.

All the blueberries went into this purple smoothie with cucumber, banana, cashew nuts and  almond milk, yum!

Last week I bought a big massive watermelon and have been practically eating it everyday since.  I’ve tried to eat it in different ways and had some on a salad for lunch along with mixed leaves, cucumber, avocado and grilled haloumi cheese.  The salty cheese and sweet watermelon was a match made in heaven!

I’ve been spiralizing again this week and loved this creamy salmon pasta dish where I mixed traditional spaghetti with courgetti so that I got the best of both worlds.  It’s a great way to get a vegetable hit if you’re not completely sold on courgetti and love pasta.

Whilst Aiden was having a nap when we were out and about I decided to take the opportunity to have some me time and popped into my favourite coffee shop to treat myself.  I ordered a matcha latte and a gluten-free chestnut and apple cake that was just gorgeous.

Having a quiet half an hour to myself felt like such a treat (it doesn’t happen very often!) and I finally got the chance to have a proper look at all the healthy living products on offer.  Thankfully for my bank balance I managed not to buy a thing, which took so much self-control indeed!
