Are you bored of traditional style salads? Are you looking for something a little bit different to spice up your lunch times? Without wanting to run the risk of sounding like an insurance claim advert, I may just have a the perfect solution to your problems with my Oriental Vegetable and Cashew Salad.I fancied something a little bit different for lunch last week, but was still packed with veggies. This oriental inspired warm salad and cashew nut combination more than hit the spot and has fast become one of my favourite meals.
This is so incredibly easy to make and was something that I just threw together one lunch time and knew that I had to blog the recipe as it tastes so good!
- 1 courgette ribbons
- 1 carrot ribbons
- 1 red pepper
- 1 red chilli (optional)
- 1/2 clove garlic
- 1 inch of grated ginger
- 1 head of pak choi
- coriander
- cashew nuts
- coconut oil
- 2 tbsp honey
- 2 tbsp soya sauce
- 1 tbsp sesame seed oil

Using either a spiraliser or a vegetable peeler, create ribbons from the courgette and carrots and set aside. Mix all of the dressing ingredients together in a separate bowl.

Heat some coconut oil in a pan on a low heat and add the chopped pepper, chilli, garlic, ginger and pak choi - cook for 2 minutes. Quickly add the vegetable ribbons to the pan and stir through then pour in the dressing and chopped coriander. Make sure all of the vegetables are covered in the dressing.

Serve and scatter over the cashew nuts. Enjoy!
I just love how colourful this salad is β talk about eating a rainbow. The different colours and vegetables means that you are getting plenty of different nutrients and minerals. Itβs also packed full of vitamin C and the healthy fats from cashew nuts. It is imperative for me to get as much nutrition out of my meals as possible, which is why this one is a winner for me.
Of course you could add any vegetables that you prefer. I think this would also work great as a side dish with fish and meat for a lovely evening meal too. Stir fries are one of my favourite meals at the moment so this one that will be sticking around for a while.
