Yeah you read that right triple, chocolate, and protein all in the same recipe name…sounds like heaven!

I’ve been experimenting a lot with chocolate protein powder recently and loving adding it to my oats.  Also the fact that Lindt has just released a blueberry dark chocolate has got me crazy about blueberries and dark chocolate together.  So I decided to combine the porridge and the Lindt chocolate idea to come come up with a delicious chocolate protein snack.

Ingredients (makes 6 bars)

3 cups of jumbo oats

1/2 cup of chocolate protein powder

1/4 cup of dark chocolate chips

1 tsp of cocoa powder

3 tbsp of honey

8 tbsp of melted coconut oil

1/3 cup blueberries

In a bowl mix the oats, protein powder, and cocoa powder together until well combined.  Make a well in the middle of the oat mixture and pour in the honey and coconut oil.  Stir the wet ingredients into the dry ingredients until the oats are coated with the wet mixture and it begins to clump together.  Add the blueberries and chocolate chips to the bowl and stir through.

Transfer the mixture into a prepared baking ban and smooth over the top with the back of a spoon.  I added extra chocolate chips and blueberries on top for some extra deliciousness.

Bake in an oven set at 180 degrees for 30 minutes. Allow the bars to cool down before cutting into bars.

Protein, blueberries and chocolate…

…what more could you possible want from a snack bar?

I’ve been eating these straight from the freezer so that they have a crisper texture.  However, eating them as they are means that they have a typical flapjack, crumbly oaty texture.

What ingredients do you like to put into your snack bars?
