Hello guys!  How’s your weekends going?

Yesterday was mad busy at work. It was predicted that it would be the busiest day in retail and it sure felt like it.  There was Christmas shoppers in all every direction rushing around like the Mad Hatter.  I cannot believe there is only one week until Christmas and I’m super excited.

We decided to head out and do some of our Christmas food shopping today. My family are spending it with us this year, which will be nice as we usually spend it with Alfie’s family. We bought quite a bit already and it looks like it’s going to be quite a feast.

It was so frosty and freezing cold outside when I woke up, hence no run today.  Although I did get in a great home circuit work out that really put me through my paces.  Since it was so cold out I thought I had better wrap up warm and layer up.

This morning for breakfast I made a lovely squash smoothie with kabocha squash, cinnamon, nutmeg, ginger, maple syrup and an apple.  On the side I had a lovely toasted slice of rye bread spread with my new favouite sunflower seed butter and strawberry jam.  I’m loving my smoothies at the moment despite the cold weather and this really hit the spot.

What really hit the spot yesterday before work was my first dose of mince pie filling oats.  I kept it simple with oats made with water and a splash of soya milk at the end with apple juice sweetened mince pie filling and topped it with creamy almond butter.  This is so gorgeous and festive. I loved every mouthful!

For lunch today I feasted on a salad made from lambs lettuce and mixed leaves, tomatoes, green lentils, a chopped apple, dried cranberries and homemade hummus drizzled with canola oils and sprinkled with smoked paprika.  A really simple salad but the smoked paprika on the hummus really made it.

For dinner I had a some of my Mediterranean Bean and Vegetarian Sausage Stew (old pic!) and served it with some leafy greens.  This certainly kept me warm and all cosy, definitely a winner for this time of year.

For dessert I thought it was time to delve into my stash of chocolate covered sunflower seeds.  Holy yum!  These are super good!  They remind me a bit like Smarties.  I used them as a topping for my soy yoghurt mixed with lemon curd.  I have since gone back for more to much on though!  I don’t think they will last very long in my house.

All of the baking that I’ve been doing a lot of baking today and the heat form the oven has been keeping me warm too.  I’ve made some vanilla fudge as another foodie gift and a veggie loaf as my non-meat alternative for Christmas lunch (recipe to come).  I can’t decide between that or a baked salmon fillet, but I have both so I will probably decide on the day.

What is your favourite way to keep the cold out fashion wise? I think lots of layers are the best way to go for me as you can always take something off later if you get too warm throughout the day.

What are you eating for your main meal on Christmas day?  Since I’m a pescatarian I made the veggie loaf as everyone will be eating either ham and lamb at my house. But, I am quite taken with the idea of baked salmon…hmmmm…
