Instead of noodles, this recipe uses courgette noodles or as I like to call them zoodles, which means there’s an extra portion of vegetables and it feels less heavy on your stomach compared to something like egg noodles.  They’re one of my favourite low carb substitutes if I’m not wanting a heavy meal for dinner and they are great at soaking up sauce and flavours.  If you don’t have a spiraliser you can simply use a speed peeler to make pretty ribbons instead.

10 Minute Honey & Chilli Prawn Zoodles

Ingredients
  • 1 tbsp coconut oil
  • 2 garlic cloves , minced
  • 1 thumb size piece of ginger , grated
  • 2 tbsp honey
  • 2 tbsp dark soy sauce
  • 1 red chilli , sliced (deseed if preferred)
  • 2 cups Iceland jumbo prawns
  • 2 cups Iceland baby corn and sugar snap peas
  • 1 cup Iceland quick cook sliced mixed peppers
  • 2 courgettes , spiralised
Instructions
  1. Heat the coconut oil in a large pan or wok.
  2. Pour in the frozen baby corn and sugar snap peas and stir in the ginger, garlic and red chilli and cook for 3 minutes.
  3. Add in the peppers, prawns, honey, soy sauce and cook for a further 5 minutes.
  4. Next add the zoodles into the pan and mix through so everything is evenly distributed. Cook for a further 2 minutes, making sure the prawns are cooked through.
  5. Serve and enjoy.

Having a well-stocked freezer means that you can whip up a plethora of healthy meals in almost minutes like this recipe that I’m sharing today as part of Iceland’s #PowerofFrozen campaign.  Minimal chopping was required because I used frozen vegetables from Iceland that were already prepared.  A lot of people can be put off by frozen vegetables, however, I love them!  They’re such great quality and have a high concentration of nutrients because they’re frozen as soon as their picked.  Also, it’s nice knowing that I’ve got a freezer brimming with veggies when the cupboards and fridge are bare.

The frozen prawns are so juicy and cook in almost minutes.  Of course, if prawns aren’t your jam then you can swap them out for chicken, beef, pork, tofu or seitan, however, this will obviously affect the cooking times.  Whatever you decide to add to your bowl of zoodles, it will still taste delicious because the mix of vegetables and balance of the honey, chilli, ginger and soy really help make this dish.
