
Watermelon & Strawberry Popsicles

Ice lollies and watermelon always take me back to the long summer holidays of my childhood. Time seemed to go so slowly in those days, my summer holidays seemed like they had no beginning and no end, unlike the summers of today. Adulthood has seemingly made everything speed up, you blink and time has passed. Can you believe that we are nearly halfway through 2020 already!? Now that’s just crazy!

Last summer especially, I really got into making my own ice lollies and fell in love. The only real expenditure is the cost of the lolly moulds, which can cost as little as a few pounds. The rest is up to your own imagination, as long as it can be blitzed up then you’re on to a winning recipe. I think homemade lollies make a healthier and budget-friendly snack, plus you’re in control of what goes into them. With a huge watermelon in the fridge, I created these refreshing and fruity popsicles.


These have been great on warm afternoons as snacks and on balmy evenings for dessert. They remind me a bit of Solero ice lollies but instead made with strawberries, watermelon, and cranberry juice from Ocean Spray. Again you can use this recipe as the basis for your own creativity.

Do you make your own ice lollies? What is your favourite ice cream flavour?

Fruity and refreshing homemade popsicles made using watermelon, strawberries, cranberry juice and quark that is naturally fat-free and high in protein.
- 1/2 watermelon
- 200 g strawberries
- 250 g vanilla flavoured quark
- 2-3 tbsp maple syrup or honey
- 250 ml Ocean Spray Cranberry Juice

Pour all of the ingredients into a blender.

Blitz until smooth and pour into ice lolly moulds. Allow to freeze for 6 hours or overnight.

Run the mould under warm water to release the popsicles to eat.

What a great little recipe! I love Watermelon and of course Strawberries are a fantastic fruit. I recently bought some watermelon lollies from a well known supermarket and they tasted of everything BUT Watermelon so I will be giving this a try instead x
