Fluffy waffles bursting with juicy blueberries for the ultimate weekend brunch.

Ingredients
3eggs
125g/ 1/2 cup ricotta cheese
480ml/2 cups almond milkor milk of your choice
240g/2 cups self-raising flour
2tspcinnamon
50g/1/2 cup blueberries
Instructions
Set up your waffle maker as per the manufacturer's instructions (I used the classic waffle setting).
Beat together the eggs, almond milk, ricotta and cinnamon until combined and then pour into the flour in a large bowl. Mix together until completely smooth and free from lumps.
Gently fold through the blueberries.
When ready, pour the batter into the the waffle maker and cook.
Serve with your favourite toppings including maple syrup and enjoy!

The batter can be used to make American-style pancakes. Can be frozen after cooking.
